Recipes: Refreshingly Unique Fruit

                                                                                                                  These recipes are a refreshing change to that boring old fruit salad in a watermelon boat or that tiresome old strawberry shortcake. They are prepared ahead of time, so there's no fuss or muss when you have a picnic, barbecue or inside dinner party.

FRUIT SALAD
Empty a jar of mint jelly in a pot and slowly heat until it turns to liquid. Stir frequently. Let cool. Chop up any fresh fruits you prefer - apples, strawberries, kiwi, grapes, peaches, etc. As soon as jelly is cold, pour over fruit. Cover and keep refrigerated until ready to serve in ice cold bowls.

Simple, refreshing and the jelly adds a new dimension.


PINEAPPLE WITH CREME DE MENTHE (Desert) 

Peel, core and slice fresh pineapple. Place in flat container and pour as much creme de menthe as desired. Cover and refrigerate overnight.

This is the perfect desert after a heavy meal, to carry on picnics or to take to church socials. ; -) I used to put it in the cooler when traveling - very refreshing after driving for five or six hours.

  1. Oh gosh that sounds good. I don't know what the hell to eat anymore. Anything with fruit sounds wonderful. I can't seem to go to the Doctor without him telling me something is bad in my diet. He couldn't argue with fruit. Booze no. damn it. I'll sneak it..hehe

  2. Last night, I had a salad of fresh pear, pecorino cheese on bed of arugula with honey and balsamic vinaigrette drizzled onto the plate.

  3. Pretty impressive Leslie ... It seem's you have experience in this culinary stuff too. I love fruit ... but dont know much about preparing thing's ... I just kind of eat it "as is" I reckon. Guest's? Any guest in my lair know's not to expect much ... heh, heh, heh, heh, heh. :)

    RC: This is the kind of cooking I used to do. Now I'm happy to have canned refried beans wrapped up in tortillias 2X/day!

  5. Sometimes people look at a recipe with 25 ingredients and think, "Wow, that looks fabulous." Takes them forever to prepare and it tastes like cardboard.

    Other times people look at a recipe with four or five ingredients and think, "That can't be any good." Takes minimal prep time and is absolutely delicious.

    Less is more.
